weekend food alpha is chapa bread: 7g instant yeast 60ml warm water 15g sugar 420g sifted flour 8g coarse salt 240ml warm milk mix sugar water yeast set aside for 10min mix flour and salt in a bowl form a well when yeast mixture is foamy add to flour then slowing work in milk finish rolling by hand until smooth then cover and set aside until it doubles finally roll into log about a forearms length long and cut into 12 pieces stretch into rounds a couple cm thick cover with damp towel rest for ~30min until puffy to cook, heat a cast iron pan (or a chapa) over medium low, around 5min per side these breads are tasty af with cream cheese a thick slice of tomato and some basil serve warm
