Unofficial list of most delicious cuisines that weren’t originally from a region but invented after Columbian Exchange:

▫️Fries: Potaoes (via Americas) spread to Europe same time as tomatoes and led to French and Belgian version of fried sliced potatoes.
▫️Empanadas: Spanish colonizers also brought wheat to Americas and led to creation of savoury stuffed pastries.
▫️Shakshuka: Middle Eastern egg dish souped up after arrival of tomaotes and chilis (via South America).
▫️Papaya Salad: Chili peppers (via South America) arrived in Thailand in 16th century and combined with papaya for hot and sour dish.
▫️Peri-Peri Chicken: Portugese traders brought chili peppers (via South America) to Africa and combined the ingredient with chicken-cooking method native to Mozambique and Angola.
▫️Curry Samosas: Portugese traders brought potatoes and chilis (South America) to India, which was combined with Middle Eastern pastry recipe for Samosas.

I would love to read a general interest book about how pretty much every major world cuisine as we know it was completely reinvented over a period of 50-100 years in the wake of the Colombian exchange--chilis coming to India and China, tomatoes to Italy, etc. etc.
