Round 2, Coho salmon. This was delicious too, but very different. Leaner, much more dill/lemon/salt/sugar/pepper flavor from cure, stronger salmon flavor, and firmer bite. I prefer Atlantic salmon classic mild buttery rich melt in your mouth gravlax flavor.
写真からはちょっとわかりにくいですが、12時間経つと、すでに鮮やかな塩漬けサーモンの色としっかりとした食感が生まれています。基本的には、重みを下げたまま、12 時間ごとにひっくり返すだけです。好みの硬さにもよりますが、36〜48時間。
